The Coveteur (www.thecoveteur.com) is my latest daily-web-reading obsession. While fashion-blog stalking perusing is probably my #1 internet pastime, it's closely followed by health food reading, DIY, decorating and travel... I like to get a little taste of everything. So when I stumbled across the "EASIEST HEALTHY LIVING SWAPS EVER" article on The Coveteur and thought "this is exactly the type of article I'd like to do for sxsoho!" I realized they already did it so damn well it wasn't worth writing my own. So shout out to The Coveteur for this awesome article, and for ahmazing photography that pairs beets with their corresponding Belle Siegerson flats. Art, people.

Easter Brunch Recap

 I have a large family scattered across the east coast, and it's always impossible to get everyone together on actual Easter Sunday, so every year we celebrate "Feaster" or Fake-Easter, aka whatever weekend in April all our aunts and uncles and cousins can fly in. This is actually quite nice because it allows me to host my own Easter Sunday Brunch for friends in the NYC area. 

Here is the recap of this year's get together, from table settings to tips, DIYs and recipes from my meal.




The first thing I do on the day of and event is set my table. Even if your food is still cooking when your guests arrive, the scene will be set and guests will feel comfortable to mingle because you will (at least appear) to have everything finalized and under control!

I wasn't able to find the flowers I wanted for my table this year so I went with a sunny, fresh design that didn't require any! I kept my place settings simple and clean, white plates and coffee cups and clear mimosa glasses. I added color with gold chargers ($2.50 each at Target and I use them ALL THE TIME), yellow lemon place cards and gold chevron print napkins from C Wonder. (I love THESE too for spring!)

If you don't have a full set of matching plateware, cups, etc, have no fear! The key to mismatched place settings is to make it purposeful! If you are setting a table for six, don't have 5 matching places and one odd man out - alternate each plate and cup to create a pattern so you have 3 and 3 that match. Or even make each place setting decidedly different so that your table has an eclectic feel. I like to finish an eclectic look by choosing an interesting coffee or teacup for each place that suits the person who will be sitting there. It shows that you put thought into each of your guests, even if they don't all have matching plates:)


MIMOSA + BLOODY MARY BAR

This is one of my favorite brunch/dinner party tips, that I posted about extensively earlier this week. Creating a make-your own drink station on a table or countertop for guests to utilize when they first arrive is (a) fun and colorful and (b) solves the age old problem of "too many cooks in the kitchen" aka guests crowding around asking what they can do to help you while you're trying to put the finishing touches on your meal. Now you can tell them to help you (and themselves) by making a delicious drink!

Here's the table once the meal was dished. So colorful! For the brunch I served a quiche lorraine as my protein/main dish and a red flannel hash as my starch (keep scrolling to find recipes below). For my greens I served a spring salad made with mixed greens, a can of mandarin oranges (drained), blueberries, chopped apple, pecans and crumbled blue cheese with a raspberry vinaigrette. Salads with fruits and veggies are great both for spring and for brunches when people are craving something lighter and fruity.


And the piece de resistance... angel food cake for dessert! 

I won't dain to include a recipe here because I used a box mix for this cake. All you have to do is add water to the mix!! It's too easy not to do this when you're preoccupied with cooking all the other parts of the meal. It still tastes 100% better than if you bought one in store and no one will know (or care) that it's not homemade once you add your own homemade topping. Just do yourself a favor and buy yourself the $10 angel food cake pan at Target. It's necessary. This type of cake won't bake right in a regular cake pan. And it's so good you'll want to make it again this summer. (Angel food cake is also supposedly a fat-free dessert. Sugar free? No. But fat-free? Ok. Oh hello there swimsuit season, terrifying to see you.)

I popped this cake in the oven while I was working on my main dishes on the stove, then let it cool while we ate our meal. For the topping I sliced a whole lotta strawberries and then threw in the blueberries and raspberries that were left over from my cocktail station. HERE IS THE KEY: my mother taught me this as a child and it's one of the best and easiest tips for fruit topped desserts. Slice your strawberries into a bowl and then sprinkle a bit of white sugar over them. Mix up with a spoon and then let sit. The sugar will draw the juice out of the strawberries and make it into the world easiest juicy fruit topping. Without this step, your grocery store bought strawberries look a little sad and dry atop a delicious cake.


EASY PEASY LEMON SQUEEZY (DECORATIONS)

To brighten up the party, I purchased a few bags of multicolored easter candies, namely jelly beans and m&m's. I dumped them out into a medium sized bowl and then spent a few minutes separating the candies into smaller bowls based on color. I then filled a few glass containers (some small vases and mason jars) with layers of each color of candy and set them about the space. Colorful + delicious.

I have to say my favorite decoration were these easy + cheap lemon place cards for each table setting.

KICK ASS QUICHE RECIPE

For my holiday meal, I decided to go with a more traditional Quiche Lorraine, but the beauty of quiches is that you can fill them with ANYTHING your heart desires. I'm excited to try asparagus in my next one...

Tips on Quiches The way I remember the foolproof quiche formula is two parts egg to one part milk, i.e. 3 eggs to 1 1/2 cup milk. This will give you just enough eggs to set the milk, but your quiche will still be silky and custardy. If you prefer a bit more substantial quiche, go with 4 eggs. As for the milk vs. cream debate, original quiche recipes call for all cream, but most current recipes now call for 1 cup milk and 1/2 cup cream. I generally just go with 1 1/2 cups half&half - one less thing to buy at the grocery, and then I use the remainder of the carton to serve with coffee.


WHAT YOU'LL NEED

pie crust
3-4 eggs
1 1/2 cup cream or milk
1 medium onion
1 bag spinach
3-4 strips bacon
1 - 1 1/2 cups swiss cheese

1. My first step was to pre-bake my frozen pie crust. Preheat the oven to 350F. Line the frozen crust with aluminum foil or parchment paper so it completely covers all the edges. Then fill 2/3 of the way with dry beans to weigh it down to prevent bubbles. (Don't fill more than that. If your weights are too heavy, the crust will stick to the foil.) Bake 20 mins. Remove from oven and remove the pie weights by lifting the foil up by the edges. Using a fork, poke little holes all around the base of the pie crust then pop back in the oven for 10 more minutes (it will be lightly browned all over).

2. While your crust is baking, prepare all your fillings- wash and dry your spinach, chop your onion, defrost your bacon and shred your cheese. 

3. Pre-cook each of the fillings that will go in your quiche. Reusing the same pan I just fried the bacon, sautéed the spinach and browned the onion.

4. Next, fill your baked crust with your fillings. I spread about 1/3 of my cheese evenly on the bottom, then sprinkled half my spinach, then half my onion and half my bacon over that. I then repeated another layer of the remaining halves of spinach, onion and bacon. Top with remaining cheese. Set aside.

5. Using a large bowl, whisk your eggs. Add your milk or cream (I also added salt, pepper and nutmeg here to season) and whisk vigorously so your quiche will be fluffy. Pour into pie pan, stopping just before you reach the top - believe me, throwing away a little extra egg mixture is better than attempting to transport an overfilled quiche into your oven without catastrophe).

6. Bake quiche at 350F for 30-40 minutes. The quiche will be done when only the center still wiggles a bit. Let cool so the filling will set, or become firm. You can eat at room temperature, or reheat the next day in the oven at 200F. I prefer to make my quiches the night before. The consistency is always better the second day.

Tip: Wrap the edges of the quiche lightly with foil before baking (it doesn't have to look pretty), then remove the foil about 15 minutes before the quiche is done. This will ensure a perfectly browned, but not overdone, crust.



RED FLANNEL HASH RECIPE

A potato dish is a must for me for big brunches, but considering that quiche is not the most colorful dish, I wanted to add something more colorful to my plate other than white potatoes. This red flannel hash gives a great pop of purple/red against the yellow quiche and green spring salad.


WHAT YOU'LL NEED

one large leek 
(you can use an onion instead)
3 red potatoes
3-4 large beets, or about 10 small beets 
(thoroughly scrubbed)
3 cloves garlic, minced
a good pinch of oregano, thyme & rosemary if you have them
goat cheese for topping (optional)

1. Roughly chop leek, potatoes and beets. Heat a tablespoon of olive oil in a pan over medium heat and saute your leek until it begins to soften. Then add your garlic and spices, with a generous pinch of salt and pepper.
2. Add in your potatoes and beets. Cover the pan and cook until tender, about 20-25 minutes, stirring occasionally to prevent the bottom from burning. Try one of the potato chunks to test when it is soft and done, and to determine if you need more spices.
3. Sprinkle with goat cheese and a dash of herbs if desired. Serve warm.

Mimosa Bar DIY


I love hosting dinner parties at my home, but I would say that the toughest part of throwing such a party is the first 15 minutes when your guests start showing up. Cooking-wise, this is crunch time for me, when I'm pulling all the dishes together that I didn't want to get cold by making earlier. And I can GUARANTEE you that the first few people to walk into your home will immediately stand .2 feet away from you and your stove and ask you repeatedly what they can do to help. This is always a kind gesture, but most likely not that helpful. Here is the simplest, most effective way to subvert this:

Helpful Guest: "Can I do anything to help?"
Host: "Why yes you can! You can make yourself a drink! (Points to bar)"

There are two reasons this works so well. (1) Instead of saying "No, I think I'm ok" which will most likely result in repeat offers to help you, by telling guests "Yes, there is something you can do for me" you make them feel helpful and give them something to occupy themselves with, instead of standing around feeling useless. And (2) everybody enjoys a fun drink station. Alcohol = the great equalizer.

So when I hosted my annual Easter brunch this year, I decided to try out a make-your-own mimosa bar. It's as easy as 1-2-3 (4) as long as you incorporate a few key elements. 

Here are my top tips to make one of your own:


1. Serve a few juice options. Because my guest list was small, I only went with orange and grapefruit juice (the sweet classic + something for guests who prefer tart over sweet). If you're entertaining more people, pineapple, cranberry or blood orange juice would also be great to add. 

Tip: take the juices out of their store-bought containers! Not only will it look much more uniform and upscale, but will save you money too (now no one cares if I paid $10 for a fancy juice or $2 for the carton on sale at the supermarket) And while having all the same bottle is nice aesthetically, it's not necessary, just choose your containers with purpose. I only own one pitcher, so I used it for the OJ since I was serving more of that than any other juice, anticipating that the classic would be most popular. The other two bottles I had on hand. I think I got them from Ikea. They have THESE BOTTLES online for $3.99 each, but I'm pretty sure I found mine in store for only about a dollar or two. Or if you're really thrifty, you can save clear wine bottles from white wine to use for this - just soak them in hot water to remove the labels.


2. Serve small or sliced fruit. This is the part of the station that makes it a fun DIY. I went with an all berry theme, but you could also serve small chunks of lemon, orange, pineapple or mango for a more tropical take. If you don't have small glasses like mine, an eclectic mix of teacups would be cute, or a few medium sized jars would work well for a rustic theme. 

Serve with teaspoons and include a muddler so people can muddle the fruits in their glass if they'd like. If you don't have a muddler (I don't.) the handle of a wooden spoon works well too (and adds to a rustic vibe).


3. Labels! You can buy a package of standard sized tent cards at any stationary or office goods store, or just cut your own out of cardstock. Use them to label juices, cut up fruits, and anything else that may be unclear. It will answer guest's questions for you and help keep your station looking clean by helping people to put things back in the right place.


4. Something for the guys. It just so happens that fruity champagne drinks often tend to appeal to the ladies more than men, so if you're having a big male turnout, I'd suggest adding a bloody mary option to your mimosa bar. To do this, I simply added a pre-made batch of bloody mary mix to my line up of juices, picked up a neat looking bottle of vodka, and placed a tall celery stalk in each ball jar. It's cute AND manly to drink out of a ball jar these days. Win win.


Final Tips:
.
Symmetry. It really doesn't matter whether your glassware and dishes are very fancy, if your station has symmetry it will be visually appealing. Notice that I set my mimosa (aka wine) glasses on the left side of the table and mirrored my bloody mary jars on the right. I also mirrored the champage bucket behind the wine glasses with the vodka bottle behind the jars. The celery sticks in the jars not only add a nice pop of missing color, but also serve to bring the shorter jars up to roughly the height of the tall wine glasses on the opposite side, completing the symmetry of the table. 

{I also went with even numbers for the two sides, and odd numbers for the elements in the center of the table.}

Chillin'. PLEASE chill the drinks. Just like smoothies, this is key to a tasty drink. Keep your juices in the fridge and your alcohol in the freezer until just before your guests arrive.

RED ALERT! There is a Cupcake ATM in Manhattan!!


 {Always look your cupcake machine in the eye to show it who's boss.}

As any New Yorker can tell you, the ability to buy whatever food your heart desires - 24 hours a day - is a quality we greatly admire. And this is big news people! The ATM opened just yesterday but articles declaring it's arrival have been popping up in various media outlets for a few weeks now. 

And did I mention the line?? It went down the block and around the corner and took about 45 minutes to get through. And Sprinkles actual cupcake shop is literally 10 feet away (notice all the colorful dots covering it's window) and would take probably less than 5 minutes to get you a cupcake. 

So naturally I decided to stick it out in the opening day line.

Cupcake Joy. I'm only skeptical until someone hands me something anything made of cake.

Breakfast of Champions



This breakfast sandwich is the best healthy-brunch-alternative I love to make at home on the weekends. It's got greens, proteins, complex carbs- all that good stuff- while still being pretty fast to make.


WHAT YOU'LL NEED:
Whole Wheat Tortilla
1-2 eggs
Muenster Cheese
2 Kale Stalks
Salsa
Coconut Oil
Salt & Pepper


(1) Heat some coconut oil in a sauce pan. Wash your kale and rip it up into small, bite-sized pieces and throw it into one side of your pan.

(2) While that starts cooking, place a slice or two of muenster cheese on one half of your whole wheat tortilla and put it in your oven on broil (or in a toaster oven) to toast the tortilla and melt the cheese.

(3) Mix up your kale with a spatula periodically to coat it with the oil and so nothing gets burnt to the bottom of your pan. Once it turns bright green, crack an egg into the other side of the pan. I only use one egg when I've got jumbo eggs in the house, or when I'm not overly hungry. Otherwise, it might be easier to make the kale and two eggs in separate pans.

(4) When the eggs are done to your liking, pull your tortilla out of the oven, scoop your kale on top of the cheesy half, place your eggs on top of that and spoon some salsa over top of the eggs.

(5) Fold the empty half of your tortilla over all your fillings and enjoy!

Groovy Green Smoothie


This is my FAVORITE smoothie to make. It's simple, but packed with fiber, iron, potassium, calcium, antioxidants and vitamins A, C and K! I have a noticeable increase in energy after I drink one of these, it's crazy how good it makes my body feel. Plus the color is an outrageously bright green, so... that's fun too.


WHAT YOU'LL NEED:
1 green apple
1 orange
1/2 lemon
1-2 stalks of kale
OJ


STEPS:
(1) Wash your fruits and veggies, then cut them up into large chunks. I generally peel and quarter my orange and I don't peel my apple (the skin is good for you) then quarter it and cut each quarter into half again. Rip your kale into medium sized chunks as well.

(2) Add your ingredients to your blender so that the softest things will get blended first. This makes it easier on your machine and the whole smoothie will turn out more evenly blended. My blender cup gets inverted onto the blade, so I put the apple in the bottom of the cup, then softer things on top. If you are using a regular blender, do the opposite: add the orange and kale first, then the apple.

(3) Pour enough OJ to cover about 1/4 - 1/3 of your ingredients (this is usually between 1/2 to 1 cup for me) and squeeze the juice of half a lemon in there. 

I'm a big fan of tart drinks, plus the lemon complements the kale well and is great for you in the morning {See every article on lemon water, ever}. I'm not a fan of ginger (shoot me), but if you are, this is a great time to add a bit of ginger to this bad boy too.


Pulse a few times in the blender, then blend on high. Stop the blender to check your consistancy. If your machine is having trouble blending the drink, it's probably too thick. This happens to me every time. At this stage, I add some more OJ, or even water, if you like a more mild smoothie, then throw in about 3 ice cubes. A cold smoothie = a tastier smoothie. Blend again and voilà! Groovy green smoothie goodness awaits you.
