Breakfast of Champions



This breakfast sandwich is the best healthy-brunch-alternative I love to make at home on the weekends. It's got greens, proteins, complex carbs- all that good stuff- while still being pretty fast to make.


WHAT YOU'LL NEED:
Whole Wheat Tortilla
1-2 eggs
Muenster Cheese
2 Kale Stalks
Salsa
Coconut Oil
Salt & Pepper


(1) Heat some coconut oil in a sauce pan. Wash your kale and rip it up into small, bite-sized pieces and throw it into one side of your pan.

(2) While that starts cooking, place a slice or two of muenster cheese on one half of your whole wheat tortilla and put it in your oven on broil (or in a toaster oven) to toast the tortilla and melt the cheese.

(3) Mix up your kale with a spatula periodically to coat it with the oil and so nothing gets burnt to the bottom of your pan. Once it turns bright green, crack an egg into the other side of the pan. I only use one egg when I've got jumbo eggs in the house, or when I'm not overly hungry. Otherwise, it might be easier to make the kale and two eggs in separate pans.

(4) When the eggs are done to your liking, pull your tortilla out of the oven, scoop your kale on top of the cheesy half, place your eggs on top of that and spoon some salsa over top of the eggs.

(5) Fold the empty half of your tortilla over all your fillings and enjoy!
